really simple madeira cake

Makes 1 tasty loaf-sized cake

  • 1 5oz/small pot of natural yoghurt (keep the pot)
  • Sugar
  • Self raising flour
  • Vegetable oil
  • 3 eggs
  • 'Flavourings' (see below)

Pre-heat the oven to 160°C. Put the yoghurt into a bowl, then using the pot as a measure add 2 measures of sugar, 3 of self raising flour and 1 of oil. Add the eggs and mix together into a smooth blend. Add the flavouring of your choice from one of the options below.

Pour the mixture into a greased loaf tin and bake in the pre-heated oven for around 1 hour. The cake is ready when you can put a knife into the middle and it comes out without any sticky cake mix on it. Turn the cake out onto a cooling rack and leave to cool before adding any toppings.

flavourings

This makes for a great cake base, and you can add any bits and pieces you want to make the cake into any flavour you want.

chocolate chip

Add 100g of sifted cocoa powder and 250g of Green and Blacks über dark chocolate, broken into individual squares, and the individual squares cut in half.

lemon and cinnamon

Add the juice and grated zest of 2 lemons and cinnamon to taste, around half a teaspoon is good. Also nice to serve with a lemon glaze, made from icing sugar, water and lemon juice, drizzled on the top when the cake is cooled.

fruit goodness

Add some 50g of mixed peel and 50g of sultanas, or more of either if you like it really fruity.

blueberry or cranberry

Add 100g of fresh or dried blueberries or cranberries for a tangy fruit flavour.
